Both are excellent for so many things from skinning a deer to chopping an onion They work best with a wooden bowl instead of with a flat wooden cutting board. NOT a cherry fancy wooden bowl but a basic simple wooden bowl. I

BONUS!! If your budget permits $$$$ or $$$$$, Nobu’s first name is Matsuhisa. We were teased by several fellow NLC members in the past when word spread that we had a $500 meal for three during the NLC conference. We DID order everything on the menu with NO effort to be rational in our ordering. If we wanted foie gras, we ordered it. BAD Lenny! Good Matsuhisa! . The $500 did not include a tip. It is certainly the best Sushi in Aspen, and Nobu’s is quite famous for all of the locations. It is something worth saving for, and not to be missed. I made a mistake and opened my mouth, which will cost Debi and me a lot! I do owe her a 39th Anniversary Dinner. This should put me back to even at least! We both have had the pleasure of eating here before, and it is worth every penny, nickle, dime, dollar, and hundred.
